Why Our Butter Chicken with Cashews Earned a Permanent Spot on the Menu

Some dishes are just meant to stay.

Our Butter Chicken with Cashews started life on the specials menu. A dish we'd rotate in and out. But every single time it disappeared, the same thing happened: the requests flooded in. Is the butter chicken back? When is the butter chicken coming back? Please bring back the butter chicken.

So we listened. And now it's permanent.

What Makes It So Good

We could tell you it's the sauce. Or the chicken. But really, it's everything, and the fact that we don't cut corners on any of it.

Cooked from scratch, every time. There are no shortcuts here. No pre-made pastes, no shortcuts in the spice blend. Every batch starts from the beginning.

Ground cashews. This is the detail that changes everything. Ground cashews give the sauce a richness and depth that cream alone can't achieve, it's what makes the texture so silky and the flavour so layered.

Free-range Hazeldene's chicken thigh. We use thigh for a reason. It stays tender, it absorbs flavour beautifully, and it comes from Hazeldene's, one of Australia's most trusted free-range chicken producers. Quality in, quality out.

Slow cooked. Not rushed. The sauce needs time to develop. We give it that time. You can't fake the depth of flavour that comes from a proper slow cook.

Small batches only. We cook in small batches so every dish gets the attention it deserves. This isn't a production line - it's a kitchen, and it shows.

Watch: How Neredah Serves It

In the reel above, Neredah shows you exactly how she plates up the full spread, and shares one of her favourite kitchen hacks along the way.

The freezer chilli hack: Neredah always keeps chillies in the freezer. Why? Frozen chillies are infinitely easier to slice or dice finely, and they mean you can add heat to any dish, any time, without needing fresh chillies on hand. It's a small thing that makes a big difference.

In the reel, she's serving the butter chicken alongside:

A Family Curry, Done Right

This is a mild curry - genuinely family friendly, genuinely crowd-pleasing. The kind of dish that works for a Tuesday night with the kids just as well as it does for a dinner party where you want to impress without the stress.

But here's the thing about mild: it doesn't mean boring. It means the base is beautifully balanced, and you get to choose your own journey from there.

Neredah's go-to garnishes? Sliced frozen chilli, fresh coriander, and a generous spoonful of Mango Chutney. It's the combination that takes a great dish and makes it feel like yours.
